Pav Bhaji Banane Ki Vidhi: Mumbai Ke Prasiddh Street Food Ka Khajana
1st Step : Samagri Ikattha Karein
- 3 bade aloo, chilka kat kar dice karein
- 1 katori phool gobhi ke phool
- 1/2 katori hari matar
- 2 bade tamatar, barik kata hua
- 1 bada pyaaz, barik kata hua
- 1 shimla mirch, barik kata hua
- 4 lahsun ki kaliyan, bareek kata hua
- 1 inch ka adrak ka tukda, kaddukas kiya hua
- 2 hari mirch, bareek kata hua
- 2 bade chammach pav bhaji masala
- 1 chammach lal mirch powder
- 1/2 chammach haldi powder
- Namak swaad anusar
- Makhan pakane ke liye
- Kata hua dhaniya patti upari garnish ke liye
- Nimbu ke tukde upari ke liye
- Pav upari ke liye
2nd step: Sabjiya Pakaye
- Ek pressure cooker ya bada bartan mein aloo, phool gobhi ke phool aur hari matar daalein.
- Sabjiyo ko dhakne wale pani daal kar ubal aane tak pakaye.
- Pak jaane par, sabjiyo ko ek aloo mashar ya chamach ki madad se kadukas kar lein jab tak ki aap ek khurdara texture na prapt kar lein. Side mein rakh dein.
3rd step: Bhaji Taiyar Karein
- Ek bade pan mein madhya aanch par makhan garam karein.
- Bareek kata hua lahsun, kaddukas kiya hua adrak aur bareek kata hua hari mirch daalein. Khushboo aane tak bhunein.
- Barik kata hua pyaaz daal kar translucent hone tak pakaye.
- Ab, barik kata hua tamatar daal kar soft aur mushy hone tak pakaye.
- Kata hua shimla mirch daal kar kuch minute tak pakaye jab tak vah naram na ho jaaye.
- Ab, pav bhaji masala, lal mirch powder, haldi powder aur namak swaad anusar daal kar acche se mix karein.
- Pan mein mash ki hui sabjiyo ka mixture daal dein aur sab kuch acche se mix karein.
- Bhaji ko aur 5-7 minute tak pakaye, kabhi kabhi hilate hue, jab tak yah aapki pasand ki gadhi tak na ho jaaye. Swaad anusar namak ko adjust karein.
4th step: Pav Ko Toast Karein
- Pav ko horizontal tukdon mein kaat lein.
- Ek griddle ya tava ko madhya aanch par garam karein aur ek makhan ka tukda daalein.
- Pav ke tukdon ko griddle par rakhein aur dono taraf se sunehra hone tak toast karein.
5th step: Serve Karein Aur Maje Lein
- Pav bhaji ko kata hua dhaniya patti aur ek nimbu ke tukde ke saath sajayein.
- Garama garam pav, extra makhan aur kata hua pyaaz ke saath serve karein.
- Bhaji par nimbu ka ras nichod kar aur ek alag swaad ke liye mahsus karein.
- Har swaad se bhara pav bhaji ko garama garam aur taza taza khayein.
